The Department of Agriculture (USDA) classifies beef according to its quality, defined in terms of juiciness, flavor and tenderness. There are three grades of beef quality based on the amount of internal fat, which determines tenderness, as follows:

- USDA Select: It is considered a low grade, it does not have the flavor and texture, since it presents little marbling.
- USDA Choice: Its variation is considered the most common.
- USDA Prime: It is the highest grade of marbling and an elite product.
Within this process, factors such as age, firmness, texture, color and the amount of marbling of the meat are taken into account. Marbling is one of the main factors that determine its high degree of quality.
