Spaghetti Bolognese is a dish that gives you energy, it also presents a combination of flavors, starting with the tomato sauce that everyone likes, to the juicy meat.
This is one of the most famous and delicious pastas, but what is its history? Here we tell you.
History of spaghetti Bolognese
It is said that spaghetti Bolognese is a ghost dish and arose from a misunderstanding when Pellegrino Artusi (the father of Italian cuisine) and his friend traveled around Italy and at each stop they took the opportunity to taste dishes and write new recipes.
Artusi got to know much of Italian gastronomy, conceiving ideas that would give him a spectacular bond with food. In his book was the recipe for maccheroni allá bolognese, a tomato-free sauce that had existed for decades in Bologna, but the Great War would bring about a change of no return.
To raise funds, Julia Susan Cunibe published her Ilatian recipes. Among these was the Bolognese sauce called «Artusi» but an error in translation added spaghetti. The mistake would turn into something big, changing macaroni to spaghetti.
The change with no return
Its name comes from the French verb «ragouter» which means «appetite» and «bolognese» comes from the name of the city Bologna (Italy).
This pasta did not always have the same appearance, since, when it was served at the table, the sauce was like a second additional dish to the pasta and the first ingredient was the meat.
It was not until the Middle Ages that the dish became recognizable by students who traveled throughout Europe and who made it reappear in other cities.
Until that time, it was incorporated into the traditional pasta dishes that were consumed throughout Italy and in a short time it spread throughout Italian families, who would begin to prepare this delicious dish.
Spaghetti Bolognese was incorporated into the original recipe of the Bologna Chamber of Commerce by the Italian Academy of Cuisine in 1982. Its main objective was to maintain its origin forever.
